We’ve been working with Ruby Seeto since 2009, when she was an 11 year old cancer survivor, designing tea towels to fundraise for Starship. Every year, Ruby creates a new design which is produced and sold by Wallace Cotton. This year, Ruby has shared how to create dehydrated citrus slices on her colourful tea towel. With a recipe as simple as it is beautiful, read on to discover how to make the citrus slices and 3 ways we’re using them this spring.

Designed to be used with ease when entertaining, Ruby has shared how to create her dehydrated citrus slices. Use whichever citrus you have handy – our personal picks are sweet oranges and tangy grapefruit.
• Slice citrus thinly, place on a lined tray or wire rack and bake in oven for 2-4 hours at 100 degrees celcius
• Flip the citrus over half way
• Once cool, use to decorate!
