The arrival of spring brings lighter and longer evenings, perfect for relaxed entertaining. We love hosting friends and family for casual gatherings whether it’s a slow Sunday lunch or Friday night drinks in the garden. Spring menu

The key to stress free and relaxed entertaining is keeping it simple. A simple menu allows you as the host to enjoy spending more time with your guests than in the kitchen. Prepare all your dishes before guests arrive, with one or two to be gently reheated before serving. Enjoy all that spring has to offer with fresh salads back on the menu. Start with a cheese board followed by a roast vege salad, a green salad, a feta and spinach quiche (can be made the day before and reheated) along with a protein of your choice. We suggest preparing pan-fried herb chicken before guests arrive which can be sliced and added to the salads as an easy and delicious option.

Cocktails anyone?

A lovely way to start your entertaining is to prepare a delicious cocktail to serve guests on arrival. You can’t go wrong with a well-made Aperol Spritz, bright, fun and delicious. Making the perfect Aperol Spritz is as easy as 3-2-1. That’s a ratio of 3 parts Prosecco, 2 parts Aperol, 1 part soda water.

Ingredients
• 75ml of Prosecco D.O.C.
• 50ml of Aperol.
• 25ml of soda.
• 1 slice of orange.

Recipe
1. Fill a large wine glass with ice.
2. First pour 75ml of Prosecco.
3. Add 50ml Aperol.
4. Top with a 25ml dash of soda.
5. Garnish with a slice of orange.
6. Enjoy with friends.
